Yeast (type = Saccharomyces cerevisiae ) as a model organism and as a domesticated organism is probably the best known organism in the world. It makes beer, has been used for thousands of years, it raises bread, can be seen on grapes, and can be used to produce wine or just plain ethanol ( drinking alcohol or everclear ).
Odd things about their sex:
They can switch sexes, though they really have no secondary traits.
They can clone themselves forever
When they have sex the children get together and have a single parent.
They make their own alcohol so it could be said they are ready to party all the time.
ADDED: The selection of MAT cartridges is the unusual thing here after deletion and I will have to investigate that further as it seems to imply a deeper characteristic of how the mechanism functions than would be implied by pure randomness. Switching selects to the opposite type such that if α is deleted "a" is replaced.
